Omaha Rallies Behind Local Chef, Turning His Food Truck Dream Into Reality

For years, Omaha chef Jeremy McCoy dreamed of owning his own food truck. His goal was simple: share his love of cooking with as many people as possible.
That dream began to take shape after one small act of kindness.

"This past July, I offered Omaha Police 'Lt. Dan' a plate of food while he was patrolling nearby,” Jeremy said. “That small act sparked a friendship and showed me how food can break down barriers and bring people together. It reminded me why I love doing this: food has the power to unite us, no matter our background."
The Omaha Police Officers Association soon amplified it, posting Jeremy’s GoFundMe.
“I didn’t think anything was going to come out of it, but by the next morning, it was all over the internet. I was getting so many calls… it just motivated me even more,” Jeremy recalled.
Within a week, the fundraiser brought in more than $20,000—enough to launch his dream.

“It brought a lot of tears to my eyes, but it still hasn’t sunken in that I’m going to have a food truck,” he said.
“Food is not just a meal to me. It is a way to connect, to heal, and to inspire.”
Jeremy hopes to be serving meals out of his own truck soon. Until then, he’s cooking with what he has—and trusting that Omaha will keep cheering him on.
